Talking about his career, he started his career at the age of 14 by working as a dishwasher at a Pekingese restaurant. Lee started an apprenticeship at the elegant Peninsula Hotel in Hong Kong when he was 16. At the age of 19, he learned the art of European cuisine, rising to the position of chef saucier.
In 1978, he emigrated to Toronto and continued cooking, working his way up to the executive chef position at a number of restaurants. However, his plans to move back to Hong Kong in 1983 took a tragic turn when his wife, Marilou Covey, left a few weeks before Lee and died tragically on Korean Air flight 007, which was shot down by a Soviet jet fighter after it violated Soviet airspace.
Moreover, he opened his first restaurant, Lotus, in 1987, in Toronto, where he combined Chinese cuisine and culinary traditions with European techniques. However, he closed Lotus after a decade of rave reviews, taking three years off to “re-energize” in Singapore, where he consulted for the Tung Lok restaurant group.
In 2000, he opened another restaurant named Susur. His famous lobster with black truffles, Qianpang Xie-style egg white, and uni sauces, and crispy dried scallops drew deep-pocketed foodies and critics from around the world. Similarly, in 2004, he opened a more affordable and casual restaurant named Lee.

Lee came into the controversy over the years for issues related to his labor practices. In the year 2007, the Toronto St. Ar reported that the Ontario Ministry of Labour was investigating “six allegations of unpaid wages from former workers at Susur and Lee.”
Moreover, in 2017, CBC News reported that Lee’s Toronto restaurants breached the Ontario Work Rights Act by tabulating server errors and deducting the number from their tips. One server claimed that the “IOU” practice had led to an atmosphere of “intimidation and terror” in the workplace.
A Susur Lee Restaurant Group spokesperson answered that such deductions were used to pay for employee duties and that this procedure was no longer possible. There was no investigation of the complaints by the Labor Ministry of Ontario but subsequently, a request was made for Lee to refund the withheld money.
